The Best Pumpkin Pie Recipe

This is my favorite pumpkin pie recipe. Making it is quick, which is great because I always want to have more!

For as long as I remember I have always loved Pumpkin pie. Whenever I was given a choice between pumpkin pie and almost anything else, I would always chose the pumpkin pie.

While this all sounds great, and pumpkin pie is one of the most delicious pie you could eat, why does pumpkin pie have its own spices? Why is pumpkin pie so special?

Pumpkin Pie Spice? But why?

I hear you random person on the other side of the internet, and I understand why you are so confused. So I think it is best we start at the beginning, the pumpkin pie spices themselves.

Pumpkin pie spice is made up of all the tasty holiday spices that we love. Ground Cinnamon, ground cloves, ground ginger, ground nutmeg and ground allspice. While sometimes in differing amounts, these spices almost embody the winter season itself to most people, I know it does for me.

I have been eating pumpkin pie for most of my life, and I understand why it is so popular. The taste of the spices and pumpkin filling, the creaminess of the pie, it is just the best. It is no wonder to my why people love having pumpkin spiced drinks all of kinds. That and pumpkin pie flavored treats like ice cream!

Now onto the true quandaries of pumpkin pies!

Frozen Pie Crust Or homemade?

Some of my family would say “Making pie crusts are so fast, why wouldn’t you?”

My response is “It depends on how much time I have.” Most of the time when I make pumpkin pie it has been because I have been thinking “A homemade pumpkin pie would be really good right now.”

Then the inevitable thought of what about the pie crust though, which I generally don’t feel like making myself anyways. I usually just buy my pie shells from the store, while this may seem lazy (which it completely is).

I find that just making the pumpkin filling and then pouring it into the frozen pie crusts then baking the pie is all I want to do. While there really isn’t anything else to it, I find I need another pumpkin pie quickly in the next few days.

Past that now lets start on the recipe!

The Great Pumpkin Pie Recipe

Ingredients

  • 1 cup of brown sugar
  • 1 teaspoons of ground cinnamon
  • 1/2 teaspoons of ground ginger
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground cloves
  • 1/2 teaspoon of all spice
  • 2 Large Eggs
  • 1 can of pumpkin puree (425ml)
  • 1 can of evaporated milk (354ml)
  • 1 pie shell

Directions

Preheat oven to 425 Fahrenheit and make sure the wire rack is in the center of the oven.

In a large bowl mix together the pumpkin pie spice and brown sugar.

Now while still mixing add the eggs, pumpkin puree and evaporated milk. The mixture will be quite runny by this point, but that is exactly what it should be.

Now start pouring the filling into the pie shell, be careful the bowl should be fairly heavy by this point. Now since we preheated the oven, the temperature should be at 425 Fahrenheit, bake the pumpkin pies for 10 minutes at this temperature in the oven.

After the ten minutes, lower the temperature to 350 F and continue cooking for an addition 35-40 minutes. The pie is done when a knife inserted into the pie comes out relatively clean.

After the knife comes out relatively clean place the pie on a cooling rack for 2 hours. While on the cooling rack the pie will deflate down as it cools completely, this is normal for pumpkin pies.

After the pie has cooled completely to room temperature it can be served immediately. The cooled pie can stay on the counter for three hours but should be moved to the fridge sometime within that time, where the pumpkin pie will be good for three days in the fridge.

The Real Problem with Pumpkin Pie!

Usually one of the the pies has already had a few slices cut out of it by this point and I would be lucky to have 3 slices before the first pie is gone! That is before I have even finished making the whipped cream for them!
