The Best Gluten free chocolate chip cookies

Just recently I found out that my body doesn’t like gluten much at all. So for some strange reason I started to find out how to make gluten free cookies. No reason at all 🙂
Also the more I looked the more I found that anything gluten free is a number of times harder to make well. So after a number of tries making it this is my favorite gluten free recipe. As simple and easy as I can make it!
Also this recipe only makes 8 cookies but can easily be doubled or tripled without any changes.
What kind of gluten free flour should I use?
There are so many options, but I found that Bobs red mill gluten free baking flour works great in this recipe. That is the only way you can be sure this recipe will turn out perfectly fine.
How to make Gluten free chocolate chip cookies
First lets start off with adding in the dry ingredients like the gluten free flour, baking soda and the salt into a medium bowl and mix.

In a smaller separate bowl we will add the brown sugar and the melted butter.

Now add the egg and vanilla extract and mix again. This is what it should look like.

Now add the ingredients in the small bowl to the medium bowl and stir. Now add in chocolate chips and keep mixing. Cover the bowl for 30 minutes and preheat the over to 350 degrees F. Prep a baking sheet with some parchment paper on it.

I used a cookie scoop but 2 spoons will work just fine. Make sure to place the cookie dough about 1-2 inches away from each other. Now place in the oven and bake for 12-14 minutes or until the edges are a golden brown.

Take the cookies out of the oven and place on a cooling rack to cool completely. Wait for them to each room temperature before eating as they will be too soft to take of the baking sheet.

After the time is up it is now time to enjoy!

1 (15g) tablespoon melted salted butter
1/2 cup of brown sugar
1 large egg
2 teaspoons of vanilla extract
1 cup of bobs red mill 1:1 gluten free baking flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of chocolate chips
Directions
- In a medium bowl, mix together the gluten free flour, baking soda and salt until evenly combined.
- In a separate bowl add melted butter and brown sugar then combine. After those are mixed add the vanilla and egg and stir those in until they are evenly mixed.
- add the separate bowl to the medium bowl now add the chocolate chips and mix thoroughly.
- Cover the bowl for 30 minutes. Now preheat the oven to 350 degrees F and cover a baking sheet with parchment paper.
- Using a cookie scoop or 2 spoons scoop the dough into balls and place them onto the parchment paper about 1-2 inches away from each other.
- place in oven for 12-14 minutes or until the edges are golden brown.
- After baking place the baking sheet on a cooling rack and let them cool completely before eating, enjoy!

How long do these Gluten free cookies last?
These cookies can last on the counter in a tine for 4-5 days. If you want them to last longer place them in the fridge. This should add another 4 days. If you want them to stay good for far longer place them in a Tupperware and in the freezer.
